Short essays follow the evolution of food in each region, emphasizing local ingredients, culinary traditions, and cooking techniques. More than 80 carefully vetted recipes extend the journey: appetizers, breads, soups, salads, main courses, vegetables and side dishes, sauces and relishes are all represented in indigenous recipes from regions around the world. Book Editor Jane Hickman, Ph.D., Penn Museums Expedition magazine editor, worked with Creative Director Suzanne McDevitt to develop the concept, and Penn Museum collections staff and Womens Committee volunteers to gather the information, images, and recipes for the book.
