From the Introduction by the author: The Great Salt Marsh Restaurant and this cookbook, have both grown out of my love of good food and gracious hospitality. I derive such emotional satisfaction from creating foods that please people, and I love doing something special for family and friends. I feel very blessed to have enjoyed success while pursuing my passion. I grew up on Hatteras Island where traditionally, the most important meal is served on Sunday afternoon right after church. This is the day when families gather around platters of pan-fried chicken and mountains of mashed potatoes or a Sunday roast glistering with gravy made from pan drippings. Weekday meals consist of lots of fresh fish, fried, baked and stewed. A meal at my mothers table is capable of communicating all that needs to be known about Hatteras-style cooking, whether it be bowls of steaming clam chowder, platters of crispy fried oysters or stewed hard crabs. I have been weaned on these dishes and to me Hatteras cooks have a wonderful native instinct that characterizes virtually all of their cooking. Soon after graduating with a class of eighteen students from Cape Hatteras School, I had an opportunity to travel to Long Island, New York with an old sea captain. Captn Budd was a family friend who at the time was relocating his boat to West Hampton for a summer of swordfishing and I was invited to go along. This trip changed my life, as it was then that I realized there was a big exciting world outside of Hatteras Island. Twenty years later, after having lived in exciting Miami and Manhattan and traveling many parts of the world, I returned once again to call Hatteras home. .....When writing Outer Banks The Bountiful, I had no particular theme in mind except to provide you with the recipes for the foods I like to cook most and they range from old fashion comfort foods to gourmet.....
